To extract the meat of a pumpkin, it is easiest to first bake the pumpkin.  You can do this for an hour or so in your oven at 300 degrees.  I prefer to set my oven at its lowest temperature, and leave the pumpkin in all night.  Putting a pan of water on the shelf under the pumpkin will help keep it moist.

After cooling the pumpkin a bit, cut it into slices from the stem end to the bottom, scoop the seeds off the interior side of the slice, and pull the skin off the outer side.  The meat remains.  When all slices are de-seeded and peeled, puree the meat in a blender, food processor, or mixer.  The pureed meat can be frozen until ready to use.  Save the seeds, as pumpkin seeds are a delicious snack!
