Ingredients:
- 1 cup all purpose flour
- 1 large egg
- 3/4 cup brown sugar
- 1/2 cup grated carrot
- 1/3 cup soft butter or vegetable oil
- 1 Tbsp baking powder
Steps:
- Mix all dry ingredients.
- Add the carrots.
- Break the egg and mix well.
- Pour vegetable oil or soft butter into the mixture then continue mixing until well combined.
- Chill mixture for 30 minutes to 1 hour.
- Scoop chilled mixture, form into balls and align in a greased baking sheet.
- Bake in a preheated oven over 180 C (356 F) for 15 to 20 minutes.
- Serve.
